Coconut oil has a higher smoke point than some other fats and as it is solid at room temperature, it is really good choice to be used in baking recipes. Like said it is not only good for cooking it also has health benefits. It contains a unique composition of fatty acids. In that composition there is also fatty acids that might increase your good cholesterol (HDL) levels. They may also help turn bad cholesterol (LDL) into a less harmful form. Coconut oil has also antifungal, antibacterial, and anti-inflammatory properties that can help protect against harmful microorganisms.
There is plenty of different natural sweeteners which are as sweet and simple to use as regular white sugar but more nutritious and lower on the glycemic index. In this recipe we are using coconut sugar. It is a natural sugar made from coconut palm sap and it actually has many health benefits. It has nearly 400 times more potassium than regular sugar. It is rich in antioxidants which can reduce the risk of many diseases, including heart disease and certain cancers. While white sugar has a glycemic index of 65, coconut sugar has 35. Glycemic index of the sugar that’s naturally found in fruits is around 25 so coconut sugar gets quite close on that.

- 1dl Coconut sugar
- 4 tbsp Coconut oil
- 100g Dark chocolate
- 0,5dl Plant milk
- 3,5dl Gluten free flour
- 1 Pinch of salt
How to make
- Whisk together the sugar, salt, and flour
- Whisk in plant milk and melted coconut oil until the batter is smooth
- Chop the chocolate and fold in the chocolate chips
- Chill the dough for at least 30 minutes
- Preheat oven to 180°C
- Scoop the dough on baking tray
- Bake for 12-15 minutes
